From banana to zucchini, these healthy pancakes from scratch are tasty talk-worthy alternatives to your standard lemon-squeezed, syrup-laden go tos. 

For Pancake Day 2017, we have culminated a list of lush recipes and crêpe ideas for you. They all use simple, fresh and healthy ingredients that can create pancakes that are equally as delicious as sugar-coated sweet treats.

Make Your Own Healthy Pancakes From Scratch

1. Banana

 

Banana pancakes are special. They are gluten-free, dairy-free, low in fat and require very few ingredients to make. It basically ticks all the healthy boxes for those with special dietary requirements whilst appealing to masses of food lovers. 

This type of pancake is one of the quickest to mix, fry, flip and eat. On average, it takes around 10-15 minutes to prep and cook the banana batter.

With roughly 249 calories in each pancake too, it's great for those looking to enjoy a sweet treat during a weight loss diet or program.

Emma Christensen from The Kitchn's recipe is joyously straightforward. Mash one banana, whisk two eggs. Combine. Stir. Pour onto buttered griddle pan and cook each side for one minute. Enjoy.

There will be trial and error when experimenting with the soft yellow fleshy fruit. Don't be demoralised if they turn out a disaster on the first attempt. It takes time to perfect consistency and time each pancake is spent on the pan.

2. Oatmeal 

 

A true champions breakfast.

Hulled oat grains used, commonly known as porridge, are widely chosen as the first meal of the day. They return energy in the forms of fiber, protein, calcium and Vitamin D. 

World famous Quaker® have been in the oats business for over 130 years. Using their quick, old fashioned and uncooked porridge, you can make hearty varieties on the morning of Pancake Day 2017.

You will need two bowls. In the first: combine flour, oats, baking powder and salt. In the second: mix milk, egg, and oil. Add the liquids to the dry all in one go. Stir gently, then lather and shape over your pan. 

Popular stir-ins range from apple and cinnamon to blueberries and chocolate chip. We'd recommend making your healthy pancakes from scratch with a scoop of vanilla flavoured protein for pre or post-workout fuel.

Following on from the surreal #zoats trend (that's a breakfast bowl formulated with courgette and oats), zucchini is now being used as a batter for garden fresh pancakes. 

As with all healthy pancakes, bloggers and foodies alike take their own exclusive approach when using the 'not-quite-a-marrow-yet' ingredient. Mom's Zucchini Pancakes recipe is simple and covers the basics, though.

The trick is to grate or shred the green courgette for the base of the mixture. Then, do the same with 1/2 a white onion. Combine the two together with eggs.

 

After mixing flour with Parmesan cheese and a few seasonings (e.g. salt, oregano) you simply add to the zucchini paste and stir till moist. Moist means the batter is ready to be pan fried. 

They will take a tad longer to prep and cook - roughly 30-40 minutes - but the outcome is perfect for vegetarians and deliciously exciting, albeit a unique alternative to your average Nutella crêpe. 

Serve with a sprinkling of extra spices and sour cream. No syrup, no bacon... Simply veg, eggs, onion, cheese and a variety of delectable compliments. 

4. Superfruits, Berries, and Seeds

Not only do fruit, berries, and seeds host heaps of nutritional value, they are heavenly when used both in and out of pancake batter. 

Lemon - both the juice and zest -  blended with poppy seeds prove you don't need an unhealthy sugar kick to revel in a taste bud rave. It has (and always will be) a classic healthy pancake from scratch. 

Apple and cinnamon are a timeless combination in any desert, from pies to pastries to crumbles. Slice up an apple or two (Granny Smith or Red Delicious work best) before generously dusting with spicy cinnamon for memorable mouthfuls.

Berry-based pancakes are easy to whisk up too. The most famous? Blueberries. Whether placed in the mixture or thrown over the top of a fluffy pile, they are full of natural antioxidants and vitamins.

When the word "pancake" springs to mind, we immediately think sweet, sugar and maple syrup - right? However, not everyone has a sweet tooth. This is where savory varieties triumph.

Meat (unless you are vegan or vegetarian) is an important staple of any diet when consumed in the right quantities. Topping your healthy fluffy cakes with portion controlled meat - such as chicken, bacon, and prosciutto - makes for a full-flavoured feast.
